Poner una olla a calentar con el az\u00facar y dejar que se caramelice. No es necesario remover y es muy importante no dejar que el caramelo se queme porque amarga. Cuando el caramelo tenga un color dorado, a\u00f1adir el agua con cuidado de no quemarse porque el caramelo est\u00e1 muy caliente y va a saltar. A\u00f1adir la rama de canela y la piel de un lim\u00f3n, sin la parte blanca que amarga. Remover y cuando el caramelo se haya disuelto, a\u00f1adir las peras. Dejar cocer hasta que las peras est\u00e9n cocidas, aproximadamente unos 20 minutos. Retirar del fuego y dejar enfriar.
